Super simple, super tasty: Christmas tree cupcakes
Easy to prepare and incredibly delicious: the Christmas tree cupcakes from ergobag!

Is there a Christmas party at school or daycare or would you like to bake a simple Christmas recipe with your children without having to spend hours preparing cookies in the kitchen? Then these simple and super-sweet Christmas tree cupcakes are just the thing. Easy to make and incredibly delicious! A guest post by Sabrina from “Starlights in the Kitchen”.
For 9-12 cupcakes you need:
2 eggs (size M)
150 g powdered sugar
1 pkg vanilla sugar
50 ml rapeseed or sunflower oil
120 ml milk
1 tsp baking powder
200 g spelt flour
Additionally for baking and decoration:
Muffin baking tray
9-12 muffin cases
250 ml cream
60 g powdered sugar
1 pkg cream stiffener
food coloring
piping bag
Sugar pearls or sprinkles
And it's that simple:
Preheat the oven to 180°C top and bottom heat.
Beat the eggs with the sugar in a mixing bowl at the highest speed with a mixer until frothy.
Carefully add the oil and milk and mix on the lowest setting.
add the baking powder and flour and mix everything into a smooth batter.
Line a muffin baking tray with muffin cases and then fill the cases halfway with the batter.
bake the muffins for 20 minutes, remove from the oven and leave to cool.
And now the Christmas finish
for the cream topping, whip the cream with the cream stiffener (according to the instructions on the packet). Meanwhile, add a little powdered sugar and green food coloring.
once the cream is sufficiently firm, pour it into a piping bag with a large nozzle and pipe it onto the baked muffins like a Christmas tree.
then decorate the cream with sugar pearls - your sweet Christmas tree cupcakes are ready.
Hint
Tip: If you don't want to use food coloring, you can also make it yourself with vegetables, e.g. spinach or parsley. To do this, wash and puree the leaves. Then pass the mixture through a fine sieve and collect the juice. Bring this to the boil in a pan, where the chlorophyll can then be skimmed off (forms on the surface), which can then be used for further processing. Other options are matcha tea or barley grass powder.
