Let's start the week with a breakfast classic that's perfect for packing in your lunch box:
For the small, fluffy pancakes you need:
- 2 ripe bananas
- 150g spelt flour
- 1 teaspoon baking powder
- 1 pinch of cinnamon
- A little oil for baking.
Peel and mash the banana. Add the flour, baking powder, cinnamon and 200ml water and mix quickly to form a dough. Heat the oil in a frying pan and spoon the batter into the pan. Fry each side over a medium heat. (P.S.: The pancakes can be frozen in portions.)
Then thread any fruit you like onto small skewers. Add a few cashew nuts for a little extra crunch in the lunch box.
